Hello!
Happy “First Monday of Daylight Savings Time”
How are you doing with mankind’s cruel attempt of controlling time??

I was fine yesterday- I woke when I wanted to wake and watched the sun rise an hour later than the day before, watched church on YouTube, and spent most of the day working on a new fireplace wall at my son and daughter-in-law’s house. Jeff and Zach secured the new fireplace and I taught Kat everything I know about finishing sheetrock in a few hours… she’s a natural! I can’t wait to see the finished project in a few weeks.
We worked longer than we should have, because it still felt like the afternoon, and our eagerness to stop at a logical place had us driving home after 8:00pm.
Dinner was carryout and we relaxed from the day with a few too many episodes of Ted Lasso.

This morning didn’t feel as relaxed as yesterday. I programmed my alarm because I set a lofty goal for myself, hoping to complete the first draft of my book by the end of March. My brain likes to write “good words” early in the day, so I’ve been trying to write for at least an hour before I head to the beach to watch the sun rise.
I hit the snooze button 3 times before forcing myself downstairs. I made coffee and settled for Morning pages and reading in lieu of book work. I also found time to feed my sourdough before heading out the door.

It was cloudy on the horizon today. The time the sun should have rose from the ocean came and went without fanfare; It showed up as a large orange ball, isolated by the haze, five minutes or so behind schedule- amazing and inspiring as always. The beach was empty, so I recorded some thoughts for later chapters as I walked. I found a few beautiful shells and mindlessly walked the same path I’ve walked for the last two months. I had some great ideas and I was excited to get home to my computer.

Fast forward an hour; a fresh cup of coffee at my reach and my laptop charged and ready to roll and the words can not be found. I listened to my recording- still good ideas, but lacking the lustre they had on the beach.
I opened the fridge, hoping breakfast would give me time to settle back in to my planned routine. Nothing inspiring there except 3 brown bananas and a box of blueberries that ripened too quickly.

The result of my writers block was delicious; Banana Blueberry Muffins with streusel topping hit the spot! They’re made from scratch with good things that had seen better days and an abundance of sourdough starter!
And somehow as I stretched my brain to figure out what to substitute for missing ingredients, I found the switch to turn my writer brain back on.

A lot has happened since my last update in October. So sorry for the lack of communication on here. I hope we’re friends on social networks… I tend to post there more often.
I’ll be back more often when ALL. THE. WORDS. for the book have been siphoned from my brain and transferred to my amazing content editor!

I have almost 40,000 words complete (the typical book ranges between 60-75,000)
I’ve been living the life I’m writing about and have lost 30 pounds since January 1 without sacrificing most of the things that make me happy and I can’t wait to share with you!

Banana Blueberry Muffins

Preheat oven to 350 degrees
Spray muffin tins (Recipe made 18 regular sized muffins)

Dry Ingredients
1 cup all-purpose flour
1 cup whole wheat flour
1 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
Mix in a medium bowl and set aside

Wet Ingredients
1 stick melted butter (cooled slightly)
1 loose cup light brown sugar (don’t pack it)
3 Very ripe bananas, mashed
2 eggs
2/3 cup active sourdough starter
1 tsp. vanilla extract
Pour melted butter over brown sugar in a large bowl and mix well. Add each ingredient, one at a time, whisking after each addition.
Stir in 1 1/2 cup fresh blueberries.
Sprinkle dry ingredients on top of wet mixture and stir gently until dry is incorporated into the wet.

Fill muffin tins 3/4 full allowing a slight mound in the middle.

Streusel Topping
1/2 cup whole wheat flour
1/4 cup brown sugar
2 TBS sugar
4 TBS butter, melted and slightly cooled
Mix dry ingredients and pour melted butter on top. Mix with a fork.
Top unbaked muffins with a heaping teaspoon.

Bake 20-25 minutes. Muffins are done with toothpick in the center comes out clean.
